Ingredients

Main Soup:

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage or chicken
  • 1 small onion (diced)
  • 3 garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 jar (15 ounces) Alfredo sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 8 lasagna noodles (broken into pieces)
  • 1 cup heavy cream

Additional Ingredients:

  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Brown the Meat: In a large pot, heat olive oil over medium-high heat. Add sausage or chicken, cook until browned. Add onion and garlic, cook until softened.
  2. Season and Simmer: Add Italian seasoning, red pepper flakes, chicken broth, Alfredo sauce, diced tomatoes. Bring to a boil, add lasagna noodles. Simmer until noodles are tender.
