Ingredients
Turkey
- 1 3-4 lb turkey breast, bone-in and skin-on
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Cranberry Orange Glaze
- 2 cups fresh cranberries
- 1 cup orange juice
- 1/2 cup honey
- 2 tablespoons orange zest
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for roasting the turkey.
- Make the cranberry orange glaze: In a small saucepan, combine fresh cranberries, orange juice, honey, and orange zest. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until the cranberries burst and the sauce thickens. Remove from heat and set aside to cool.
- Prepare the turkey breast: Pat the turkey breast dry thoroughly with paper towels to ensure the skin gets crispy. In a small bowl, mix olive oil, minced garlic, chopped rosemary, fresh thyme leaves, salt, and pepper to create an herb mixture.
- Season the turkey: Gently loosen the turkey skin and rub half of the herb mixture underneath the skin for enhanced flavor. Then, rub the remaining herb mixture over the skin and inside the cavity of the turkey breast.
- Position turkey for roasting: Place the seasoned turkey breast in a roasting pan, skin side up, ready for the oven.
- Roast the turkey: Roast for approximately 20 minutes per pound, or until the internal temperature measured at the thickest part reaches 165°F (74°C), ensuring the turkey is fully cooked and safe to eat.
- Glaze the turkey: During the final 30 minutes of roasting, brush the turkey with the prepared cranberry orange glaze every 10 minutes to build layers of sweet and tangy flavor developing a beautiful glossy finish.
- Rest and serve: Once the turkey reaches the proper internal temperature, remove it from the oven and let it rest for 15-20 minutes to allow juices to redistribute before carving and serving.
Notes
- Ensure the turkey is fully thawed before cooking if previously frozen.
- Use a meat thermometer to accurately check the internal temperature for safe consumption.
- Leftover glaze can be saved and reheated as a sauce for serving.
- For extra crispy skin, pat the turkey thoroughly dry and avoid covering during cooking.
- Adjust honey quantity in glaze for your preferred sweetness level.
