Description

This Cranberry Balsamic Roast Beef recipe combines the sweet tang of cranberry sauce with the rich flavor of balsamic vinegar to create a deliciously tender beef roast. Perfect for a festive holiday meal or a comforting family dinner.


Ingredients

Beef Roast:

  • 34 lb beef chuck roast
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tbsp olive oil

Cranberry Balsamic Sauce:

  • 1 (14 oz) can whole berry cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard


Instructions

  1. Season the Beef: Generously season the beef roast with salt, pepper, garlic powder, onion powder, and thyme.
  2. Sear the Roast: Heat olive oil in a skillet and sear the roast on all sides until browned.
  3. Prepare the Sauce: Whisk together cranberry sauce, balsamic vinegar, beef broth, Worcestershire sauce, and Dijon mustard.
  4. Cook in Slow Cooker: Place the roast in a slow cooker, pour the sauce over it, and cook on low for 8–9 hours or high for 4–5 hours.
  5. Shred and Serve: Remove the roast, shred or slice, and return it to the sauce before serving.
