Ingredients
Beef Roast:
- 3–4 lb beef chuck roast
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1 tbsp olive oil
Cranberry Balsamic Sauce:
- 1 (14 oz) can whole berry cranberry sauce
- 1/2 cup balsamic vinegar
- 1/2 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
Instructions
- Season the Beef: Generously season the beef roast with salt, pepper, garlic powder, onion powder, and thyme.
- Sear the Roast: Heat olive oil in a skillet and sear the roast on all sides until browned.
- Prepare the Sauce: Whisk together cranberry sauce, balsamic vinegar, beef broth, Worcestershire sauce, and Dijon mustard.
- Cook in Slow Cooker: Place the roast in a slow cooker, pour the sauce over it, and cook on low for 8–9 hours or high for 4–5 hours.
- Shred and Serve: Remove the roast, shred or slice, and return it to the sauce before serving.
