Ingredients
For the seafood filling:
- ½ cup cooked shrimp, chopped
- ½ cup lump crab meat
- ¼ cup cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning
- 1 clove garlic, minced
- 2 tablespoons green onions, finely chopped
- 2 tablespoons grated Parmesan cheese
- Salt and black pepper to taste
For the salmon:
- 4 salmon fillets (6 ounces each), skin removed
- 1 tablespoon olive oil
- Lemon wedges and fresh parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the seafood filling: In a medium bowl, combine the shrimp, crab meat, cream cheese, mayonnaise, lemon juice, Old Bay seasoning, garlic, green onions, Parmesan cheese, salt, and pepper. Mix well.
- Stuff the salmon: Cut a slit down the center of each salmon fillet to create a pocket. Fill each pocket with the seafood mixture.
- Sear and bake: Sear the stuffed salmon in a skillet for 2 minutes per side. Transfer the skillet to the oven and bake for 10–12 minutes until the salmon is cooked through.
- Garnish and serve: Garnish with lemon wedges and fresh parsley before serving.
