Description

This Cowboy Tater Tot Casserole is a hearty and comforting dish that’s perfect for a family dinner. It features layers of seasoned ground beef, corn, creamy mushroom soup, and gooey cheddar cheese, all topped with crispy tater tots. A crowd-pleaser that’s easy to make and even easier to enjoy!

Ingredients

For the Casserole:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • ½ cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper to taste

Optional Toppings:

  • Chopped green onions
  • Jalapeños
  • Sour cream

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the beef: In a skillet over medium heat, cook the ground beef, onion, and garlic until browned. Drain excess grease.
  3. Combine ingredients: Stir in corn, cream of mushroom soup, barbecue sauce, salt, and pepper. Spread mixture in a greased baking dish.
  4. Add toppings: Sprinkle shredded cheese over the mixture. Arrange tater tots on top.
  5. Bake: Bake for 35–40 minutes until tater tots are golden and crispy.
  6. Serve: Let cool slightly and top with green onions, jalapeños, or sour cream if desired.

Notes

  • You can use cream of cheddar or cream of chicken soup for a different flavor.
  • Enhance with black beans or bell peppers for added heartiness.
