Description

This Cowboy Steak and Potato Casserole is a hearty and comforting dish that combines tender steak bites with flavorful roasted potatoes, topped with melted cheese and crispy bacon. Perfect for a satisfying meal any day of the week!


Ingredients

For the Steak:

  • 1 1/2 pounds sirloin or flank steak, cut into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • 1 teaspoon steak seasoning

For the Potatoes:

  • 1 1/2 pounds baby potatoes, quartered
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbles
  • 1/4 cup sour cream (optional for serving)
  • 2 tablespoons chopped green onions or parsley


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Sear the steak: Season the steak pieces with steak seasoning. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the steak for 2–3 minutes per side. Remove from heat.
  3. Prepare the potatoes: In a bowl, toss potatoes, onion, bell pepper, garlic, smoked paprika, salt, pepper, and remaining olive oil until coated.
  4. Bake: Spread the potato mixture in a greased 9×13-inch baking dish. Roast for 20–25 minutes. Stir in seared steak and half of the shredded cheese. Bake for another 10–15 minutes.
  5. Finish: Top with remaining cheese and bacon crumbles. Return to the oven for 3–5 minutes until cheese is melted. Let rest, then garnish with sour cream and green onions.

Notes

  • Substitute sweet potatoes or add jalapeños for a spicier version.
