Ingredients
For the Cowboy Soup:
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 2 cups beef broth
- 2 cups diced potatoes, peeled if desired
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil and brown the beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
- Sauté onions and garlic: Add diced onion and garlic, and sauté for 3–4 minutes until softened.
- Add remaining ingredients: Stir in diced tomatoes, tomato sauce, corn, pinto beans, kidney beans, potatoes, and beef broth. Season with chili powder, cumin, paprika, salt, and black pepper.
- Simmer the soup: Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes until potatoes are tender and flavors are well combined. Stir occasionally.
- Serve: Serve hot with cornbread or crackers.
Notes
- You can substitute ground turkey for a leaner option or add green beans or bell peppers for extra veggies.
- Adjust spice level to taste.
