Description

These Cowboy Cookies are hearty and delicious, packed with oats, chocolate chips, coconut, and nuts. Perfect for a sweet treat any time of day!


Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract

Mix-Ins:

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups semisweet chocolate chips
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans or walnuts (optional)


Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the Ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Gradually add dry ingredients to the wet ingredients, mixing just until combined.
  4. Add Mix-Ins: Stir in oats, chocolate chips, coconut, and nuts if using.
  5. Bake: Scoop dough onto prepared baking sheets and bake for 10–12 minutes, or until golden. Cool on the baking sheet before transferring to a wire rack.

Notes

  • For chewier cookies, slightly underbake and let cool on the sheet.
  • You can freeze the dough balls and bake directly from frozen, adding 1–2 minutes to the baking time.
