These Cowboy Cookies are hearty and delicious, packed with oats, chocolate chips, coconut, and nuts. Perfect for a sweet treat any time of day!
Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Wet Ingredients:
- 1 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
Mix-Ins:
- 2 cups old-fashioned rolled oats
- 1 1/2 cups semisweet chocolate chips
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans or walnuts (optional)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the Ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Gradually add dry ingredients to the wet ingredients, mixing just until combined.
- Add Mix-Ins: Stir in oats, chocolate chips, coconut, and nuts if using.
- Bake: Scoop dough onto prepared baking sheets and bake for 10–12 minutes, or until golden. Cool on the baking sheet before transferring to a wire rack.
Notes
- For chewier cookies, slightly underbake and let cool on the sheet.
- You can freeze the dough balls and bake directly from frozen, adding 1–2 minutes to the baking time.
