Description

This Cowboy Casserole is a hearty and comforting dish that combines ground beef, creamy sauce, corn, and crispy tater tots all baked to golden perfection. It’s a favorite for busy weeknights or potlucks, sure to please both kids and adults alike.


Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 (15 oz) can whole kernel corn, drained
  • Salt and pepper to taste

Tater Tot Layer:

  • 1 (30 oz) bag frozen tater tots

Additional:

  • Nonstick cooking spray

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook Beef Mixture: Brown ground beef and onion in a skillet. Add garlic, then mix in soup, sour cream, half of the cheese, and corn. Season with salt and pepper.
  3. Assemble Casserole: Spread beef mixture in the baking dish. Arrange tater tots in a single layer on top.
  4. Bake: Bake for 30–35 minutes, sprinkle remaining cheese over tater tots, and bake an additional 10 minutes until golden and bubbly. Let cool before serving.
