Ingredients

Cowboy Butter

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Steak and Assembly

  • 1.5 lbs sirloin steak, cut into 1/4-inch thick slices

Instructions

  1. Mix well until fully incorporated. Season with salt and freshly ground black pepper to taste. Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.
  2. Prepare the Steak: Pat the sirloin steak slices dry using paper towels to ensure a good sear. Season both sides generously with salt and freshly ground black pepper to enhance the steak’s flavor before cooking.
  3. Cook the Steak: Heat olive oil in a large skillet over medium-high heat. Once hot, place the steak slices in the skillet in batches to avoid overcrowding. Sear each side for 1-2 minutes until the desired doneness is reached—130-135°F for medium-rare or 135-145°F for medium. Remove slices once done.
