Ingredients
Linguine Pasta:
- 12 oz linguine pasta
Chicken:
- 1 1/2 lbs boneless skinless chicken breasts (cut into bite-sized pieces)
Cowboy Butter Sauce:
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 4 garlic cloves (minced)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon crushed rosemary
Garnish:
- Grated Parmesan and extra parsley for garnish (optional)
Instructions
- Cook the Linguine: Boil linguine until al dente, then drain and set aside.
- Cook the Chicken: Season chicken, brown in olive oil, then set aside.
- Prepare the Cowboy Butter Sauce: Melt butter, add garlic, mustard, paprika, red pepper, lemon juice, herbs, cook until fragrant.
- Combine and Serve: Return chicken to skillet, add linguine, toss together until heated through. Serve topped with Parmesan and parsley.
