Description

These fluffy protein-packed pancakes combine the comforting sweetness of banana, the creaminess of cottage cheese, and the hearty texture of oats for a healthy, satisfying breakfast you’ll love.


Ingredients

  • 1/2 cup cottage cheese
  • 1/2 cup rolled oats (or quick oats)
  • 1 ripe banana
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp cinnamon (optional)
  • Cooking spray or butter (for the skillet)


Instructions

  1. In a blender, combine cottage cheese, oats, banana, eggs, baking powder, vanilla extract, salt, and cinnamon if using. Blend until mostly smooth but slightly textured.
  2. Heat a nonstick skillet over medium heat. Lightly grease with cooking spray or butter.
  3. Scoop 1/4 cup of batter per pancake onto the skillet. Cook 2–3 minutes until bubbles form and edges set, then flip and cook 1–2 minutes more.
  4. Repeat with remaining batter, adjusting heat as needed.
  5. Serve warm with toppings of your choice such as fruit, yogurt, or maple syrup.
