Description

Cosmic Brownie Cookies are rich, fudgy chocolate cookies topped with a luscious ganache and colorful rainbow sprinkles, creating a delightful treat that’s perfect for any celebration or sweet craving.

Ingredients

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Ganache & Topping

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • Rainbow sprinkles (to taste)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cookies from sticking and ensure even baking.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, which helps incorporate air for a soft cookie texture. Then, add the eggs and vanilla extract, mixing until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add these dry ingredients to the wet ingredients, mixing gently until just combined to avoid overworking the dough.
  4. Shape Cookies: Using a tablespoon, scoop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading. Slightly flatten each ball with the back of a spoon to promote even baking.
  5. Bake Cookies: Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers remain soft. Remove from the oven and allow cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
  6. Prepare Ganache: While cookies are cooling, make the ganache by combining the semisweet chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval until the mixture is smooth, glossy, and fully combined.
  7. Top Cookies: Spoon a small amount of the ganache onto the center of each cooled cookie and spread it slightly. Immediately sprinkle with rainbow sprinkles for a colorful and festive touch.
  8. Set Ganache: Allow the ganache-topped cookies to sit until the ganache sets at room temperature, then serve and enjoy your delicious Cosmic Brownie Cookies.

Notes

  • Ensure the butter is softened but not melted for best creaming results.
  • Avoid overmixing the dough to keep cookies tender and prevent them from becoming tough.
  • Microwaving ganache in short intervals helps prevent burning and ensures a smooth texture.
  • Cookies can be stored in an airtight container at room temperature for up to 3 days.
  • For a dairy-free version, substitute butter with a dairy-free margarine and heavy cream with coconut cream.
