These Corsican stuffed mussels are a delectable Mediterranean treat that combines the briny goodness of fresh mussels with a flavorful breadcrumb and cheese stuffing. Perfect as a starter or part of a seafood feast, these mussels are easy to prepare and bursting with savory flavors.
Ingredients
Mussels:
- 2 pounds fresh mussels, scrubbed and debearded
Stuffing:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup breadcrumbs
- ¼ cup chopped fresh parsley
- ¼ cup grated Parmesan or Pecorino cheese
- 2 tablespoons tomato paste
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
For Steaming:
- ½ cup dry white wine
Serving:
- Lemon wedges, for serving
Instructions
- Clean the Mussels: Scrub the shells and remove the beards. Discard any cracked or open mussels that do not close when tapped.
- Steam the Mussels: Simmer white wine in a pot, add mussels, cover, and steam for 3–4 minutes until they open. Remove from heat and cool slightly. Open mussels, detach one half of the shell, and arrange on a baking sheet.
- Prepare the Stuffing: Sauté onion, garlic, then add tomato paste, breadcrumbs, parsley, cheese, red pepper flakes, salt, and pepper. Spoon stuffing onto mussels.
- Broil the Mussels: Drizzle with olive oil, broil on the top rack for 3–4 minutes until golden and crispy. Serve warm with lemon wedges.
