Description

These cornmeal onion patties are crispy on the outside, tender on the inside, and bursting with savory flavors. Perfect as a side dish or a delicious snack, they are quick and easy to make.

Ingredients

Dry Ingredients:

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika

Wet Ingredients:

  • 1 large onion, finely chopped
  • ½ cup buttermilk
  • 2 large eggs, lightly beaten
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped (optional)
  • Vegetable oil for frying

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, pepper, and paprika. Stir in the chopped onion until well coated.
  2. Prepare Wet Mixture: In a separate bowl, combine buttermilk, eggs, and melted butter. Pour the wet mixture into the dry ingredients and stir until just combined.
  3. Fry the Patties: Heat vegetable oil in a skillet over medium heat. Scoop about ¼ cup of batter for each patty into the hot oil, flatten slightly, and cook 2-3 minutes per side until golden brown and crispy.
  4. Serve: Drain the patties on paper towels and serve warm as a side dish or snack.

Notes

  • For extra flavor, try adding shredded cheese or chopped jalapeños to the batter.
  • These patties pair well with sour cream, ranch dip, or hot sauce.
  • For a lighter option, bake the patties at 400°F for 15 minutes.
