Description

This hearty and comforting Corn Casserole is a classic side dish that’s perfect for any occasion. Made with a combination of whole kernel corn, creamed corn, sour cream, and Jiffy corn muffin mix, this dish is a crowd-pleaser that’s easy to prepare and full of flavor.


Ingredients

  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can creamed corn
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 2 large eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch or 2-quart baking dish.
  2. Mix the ingredients: In a large bowl, combine the whole kernel corn, creamed corn, sour cream, melted butter, corn muffin mix, eggs, salt, and pepper. Stir until well mixed and smooth.
  3. Bake: Pour the mixture into the prepared dish and spread evenly. Bake for 45–50 minutes, or until the top is golden and the center is set.
  4. Cool and serve: Let cool for 5–10 minutes before serving.
