Description
Creamy, custardy, and protein-rich egg bites packed with Gruyère cheese and smoky bacon, mimicking the popular Starbucks treat.
Ingredients
- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded Gruyère cheese
- 4 slices cooked bacon, crumbled
- Salt, to taste
- Black pepper, to taste
- Hot sauce (optional), to taste
- Cooking spray or oil for greasing
Instructions
- Preheat oven to 300°F (150°C). Lightly spray a muffin tin or silicone mold with cooking spray or brush with oil. Place a baking dish of hot water on the bottom oven rack to create steam.
- In a blender, combine eggs, cottage cheese, shredded Gruyère, salt, pepper, and optional hot sauce. Blend for about 30 seconds until smooth.
- Sprinkle crumbled bacon into the bottom of each prepared muffin cup.
- Pour the egg mixture over the bacon, filling each cup about three-quarters full.
- Bake for 25-30 minutes on the middle oven rack, until the edges are set and centers are slightly jiggly.
- Cool for a few minutes, then run a butter knife around the edges to release the bites from the pan.
Notes
- Top with chives, smoked paprika, or extra bacon for added flavor and presentation.
