Description

Creamy, custardy, and protein-rich egg bites packed with Gruyère cheese and smoky bacon, mimicking the popular Starbucks treat.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded Gruyère cheese
  • 4 slices cooked bacon, crumbled
  • Salt, to taste
  • Black pepper, to taste
  • Hot sauce (optional), to taste
  • Cooking spray or oil for greasing


Instructions

  1. Preheat oven to 300°F (150°C). Lightly spray a muffin tin or silicone mold with cooking spray or brush with oil. Place a baking dish of hot water on the bottom oven rack to create steam.
  2. In a blender, combine eggs, cottage cheese, shredded Gruyère, salt, pepper, and optional hot sauce. Blend for about 30 seconds until smooth.
  3. Sprinkle crumbled bacon into the bottom of each prepared muffin cup.
  4. Pour the egg mixture over the bacon, filling each cup about three-quarters full.
  5. Bake for 25-30 minutes on the middle oven rack, until the edges are set and centers are slightly jiggly.
  6. Cool for a few minutes, then run a butter knife around the edges to release the bites from the pan.
