Description

These chewy, fudgy cookies recreate all the nostalgic joy of classic cosmic brownies with a rich chocolate glaze and vibrant rainbow candy crunch. Perfect for birthdays, bake sales, or any sweet craving.


Ingredients

  • 1 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup mini chocolate chips
  • 1/2 cup rainbow candy-coated chips or sprinkles


Instructions

  1. Cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla until smooth.
  2. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Gradually add to wet ingredients and mix until just combined. Fold in chocolate chips.
  3. Chill dough for at least 30 minutes. Scoop dough onto lined baking sheets and bake at 350°F (175°C) for 10–12 minutes. Let cool on pan for 5 minutes, then transfer to a wire rack.
  4. To make glaze, gently melt mini chocolate chips with heavy cream over low heat, stirring until smooth. Let cool slightly.
  5. Spoon glaze over each cooled cookie and spread to edges. While still tacky, sprinkle rainbow chips or sprinkles on top.
  6. Let glaze set at room temperature or chill briefly. Serve once set.
