Ingredients
Base Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 jalapeño pepper, diced (optional for spice)
- 1 pound ground beef (optional)
Cheese & Dairy
- 1 ½ cups shredded cheddar cheese
- 1 cup Velveeta cheese, cubed
- A splash of milk or cream (optional, for thinning)
Additional Flavorings
- 1 can (10 oz) diced tomatoes with green chilies
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 tablespoons fresh cilantro, chopped (for garnish)
Instructions
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and diced jalapeño pepper, sautéing until softened and fragrant, about 3-5 minutes.
- Cook Ground Beef: If using ground beef, add it to the skillet. Cook over medium heat until browned and cooked through, breaking it up with a spatula as it cooks. Once fully cooked, drain any excess fat from the skillet.
- Melt Cheeses: Reduce the heat to low. Add the shredded cheddar cheese and cubed Velveeta cheese to the skillet. Stir frequently until all the cheese is melted and the mixture is smooth and creamy.
- Add Flavorings: Stir in the can of diced tomatoes with green chilies, garlic powder, cumin, salt, and pepper. Mix thoroughly and heat through, allowing the flavors to meld together.
- Adjust Consistency: If the dip seems too thick, add a splash of milk or cream to reach your preferred consistency. Stir well to combine.
- Garnish and Serve: Remove the queso dip from heat. Garnish with freshly chopped cilantro leaves before serving. Enjoy warm with your favorite chips, veggies, or as a topping.
Notes
- This recipe includes ground beef, but you can omit it for a vegetarian version.
- Adjust the amount of jalapeño to control the spice level or omit for a milder dip.
- If you prefer a smoother dip, consider blending briefly before serving.
- Velveeta cheese ensures a creamy melt; avoid substituting with harder cheeses to maintain texture.
- Serve immediately for best texture, as queso dip tends to thicken when cooled.
