Ingredients
For the churros:
- 1 cup water
- 1/4 cup unsalted butter
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 teaspoon vanilla extract
- vegetable oil for frying
For the cinnamon sugar coating:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
For the cookie dough cheesecake filling:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 2 tablespoons granulated sugar
- 1/4 teaspoon vanilla extract
- 1/2 cup all-purpose flour, heat-treated
- 1/4 cup mini chocolate chips
- pinch of salt
Instructions
- Prepare the churros: In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil, then stir in flour until a ball forms. Remove from heat, cool slightly, then mix in eggs and vanilla. Pipe dough into hot oil and fry until golden.
- Coat the churros: Toss fried churros in cinnamon sugar while warm.
- Make the filling: Beat together cream cheese, butter, sugars until fluffy. Add vanilla, salt, heat-treated flour, and chocolate chips. Fill a piping bag and pipe into churros.
