Delightful cold chicken-cheese kabobs combining tender marinated chicken, sharp cheddar cheese, and fresh vegetables for a quick, no-cook appetizer perfect for parties and healthy snacking.
Ingredients
Ingredients
- 2 cooked chicken breasts, cut into 1-inch cubes
- 1 cup cheddar cheese, cut into 1-inch cubes
- 1 cup cherry tomatoes
- 1 cup cucumber slices, halved
- 1/2 cup black olives, pitted
- 1/4 cup Italian dressing
- 12 small wooden skewers or toothpicks
Instructions
- Marinate the Chicken: In a medium bowl, toss the cubed cooked chicken breasts with the Italian dressing until each piece is evenly coated. Cover and refrigerate to marinate for at least 30 minutes to infuse the flavors.
- Prepare the Kabobs: Take each skewer or toothpick and thread on one piece of marinated chicken, followed by one cube of cheddar cheese, one cherry tomato, one cucumber slice, and one black olive. If using longer skewers, repeat the pattern for a fuller kabob.
- Chill and Serve: Arrange the assembled kabobs on a serving platter and place them in the refrigerator to chill until ready to serve. Serve these refreshing kabobs cold as a tasty appetizer or finger food.
Notes
- These kabobs can be prepared up to 1 day in advance for convenience.
- For a different flavor profile, substitute cheddar cheese with mozzarella or pepper jack cheese.
- Optional garnishes include fresh parsley or an extra drizzle of Italian dressing before serving.
