Description

This classic Mix Coffee Cake features a tender, moist crumb with a delightful cinnamon swirl and a crisp, buttery crumble topping. Perfect for breakfast or a sweet snack, it bakes up beautifully in under an hour and serves nine.

Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Cinnamon Swirl

  • 1/3 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 1 tablespoon melted butter

Crumble Topping

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cold butter (cut into small pieces)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease and flour an 8-inch square baking pan to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Combine wet ingredients: In a separate bowl, mix the milk, vegetable oil, egg, and vanilla extract until the mixture is smooth and homogeneous.
  4. Blend wet and dry: Pour the wet ingredients into the dry ingredients and gently stir just until combined, taking care not to overmix to keep the cake tender.
  5. Prepare cinnamon swirl: In a small bowl, combine the brown sugar, ground cinnamon, and melted butter, mixing until fully incorporated.
  6. Layer batter and swirl: Pour half of the batter into the prepared pan, then evenly sprinkle the cinnamon swirl mixture over the batter layer.
  7. Add remaining batter: Pour the remaining batter on top of the cinnamon swirl and gently spread it to cover the swirl layer completely.
  8. Make crumble topping: Mix together the flour, brown sugar, and ground cinnamon. Add the cold butter pieces and use your fingers to cut it into the mixture until it resembles coarse crumbs. Sprinkle this crumbly topping evenly over the batter in the pan.
  9. Bake: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool and serve: Allow the coffee cake to cool slightly in the pan before slicing into nine pieces and serving warm or at room temperature.

Notes

  • Be careful not to overmix the batter to ensure a soft, tender crumb.
  • The crumble topping can be made ahead and refrigerated until ready to use.
  • Use a toothpick test to check doneness to avoid under or over baking.
  • For extra flavor, consider adding chopped nuts to the crumble topping.
  • This coffee cake is best enjoyed fresh but can be stored in an airtight container for up to 2 days.
