Ingredients
Cookie Dough
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ½ cup light brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Streusel Topping
- 1 cup all-purpose flour
- ½ cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter, melted
Icing
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prepare for baking.
- Prepare the Cookie Dough: In a large bowl, beat the softened butter with granulated sugar and brown sugar until creamy and smooth. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Make the Streusel: Mix together the flour, brown sugar, and cinnamon in a medium bowl. Pour in the melted butter and stir until the mixture forms coarse crumbs resembling a streusel topping.
- Form the Cookies: Scoop approximately 2 tablespoons of dough for each cookie and place them on the prepared baking sheets, spacing about 2 inches apart. Press the scoops down gently to slightly flatten. Generously top each cookie with the streusel mixture, pressing it lightly into the dough to adhere.
- Bake: Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown. Remove the baking sheets and allow the cookies to cool on them for 5 minutes before transferring the cookies to a wire rack to cool completely.
- Make the Icing: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable.
- Serve: Drizzle the icing over the cooled cookies and let it set slightly. Enjoy these coffee cake cookies alongside a hot cup of coffee or tea for a perfect treat.
Notes
- Make sure the butter is softened to room temperature for easier creaming with the sugars.
- Do not overmix the dough once the dry ingredients are added to avoid tough cookies.
- Press the streusel topping gently into the cookie dough so it stays on during baking.
- Let cookies cool completely before icing to prevent the glaze from melting off.
- The cookies can be stored in an airtight container at room temperature for up to 5 days.
- For a dairy-free option, substitute butter and milk with plant-based alternatives.
