Cod with Tomato and Herb Butter:

  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons olive oil

  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes (halved)
  • 4 tablespoons unsalted butter (softened)
  • 1 garlic clove (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh basil (chopped)
  • 1 teaspoon lemon zest
  • lemon wedges for serving


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season the cod: Pat the cod fillets dry with paper towels and season with salt and pepper. Place them in the prepared dish and scatter the cherry tomatoes around the fillets.
