Description

A refreshing Coconut Lime Tart featuring a crisp graham cracker crust filled with a creamy, zesty coconut-lime custard. This tropical-inspired dessert combines the richness of coconut milk and sweetened condensed milk with the bright tartness of fresh lime, finished with optional whipped cream and toasted coconut flakes for added texture and flavor.

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ⅓ cup melted butter
  • 2 tablespoons sugar

Filling

  • 1 can (400 ml) coconut milk
  • ½ cup sweetened condensed milk
  • ¼ cup fresh lime juice
  • 1 tablespoon lime zest
  • 3 egg yolks
  • 1 tablespoon cornstarch

Topping (Optional)

  • Whipped cream
  • Toasted coconut flakes

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and allow it to reach the proper temperature before baking.
  2. Prepare the crust mixture: In a bowl, combine graham cracker crumbs, melted butter, and sugar until uniformly mixed and crumbly.
  3. Form and bake the crust: Press the graham cracker mixture firmly into the bottom and sides of a 9-inch tart pan to create an even crust layer. Bake for 8 to 10 minutes until golden brown. Remove and let it cool completely.
  4. Make the filling: In a medium saucepan over medium heat, whisk together coconut milk, sweetened condensed milk, fresh lime juice, lime zest, egg yolks, and cornstarch ensuring no lumps remain.
  5. Cook the filling: Stir constantly as the mixture heats until it thickens, which should take about 6 to 8 minutes. Take care not to let the mixture boil to prevent curdling.
  6. Fill the crust and bake: Pour the thickened filling into the cooled tart crust and smooth the top evenly. Bake the tart for 10 to 12 minutes more, or until the filling is just set but still slightly jiggly in the center.
  7. Cool and chill: Allow the tart to cool to room temperature, then refrigerate for at least 2 hours until it is thoroughly chilled and firmified.
  8. Serve with toppings: Before serving, optionally add whipped cream and toasted coconut flakes to enhance flavor and presentation.

Notes

  • Do not allow the filling mixture to boil to avoid curdling the eggs.
  • Press the crust firmly to ensure it holds together while baking and serving.
  • Chilling the tart completely is crucial for the custard to set properly.
  • Use fresh lime juice and zest for the best citrus flavor.
  • For a dairy-free option, ensure the whipped cream topping is coconut-based.
