Ingredients
For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup chopped pecans
For the Filling:
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup sweetened shredded coconut, divided
- 12 oz whipped topping (such as Cool Whip), divided
For the Pudding Layer:
- 1 package (3.4 oz) instant coconut cream pudding mix
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 1/2 cups cold milk
Additional Garnish:
- Additional toasted coconut and pecans (optional)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C).
- Prepare the Crust: Mix flour, softened butter, granulated sugar, and chopped pecans. Press into a 9×13-inch baking dish and bake until golden.
