Instructions
- Preheat and prepare: Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper to ensure the cloud bread doesn’t stick during baking.
- Beat egg whites: In a clean bowl, beat the egg whites and cream of tartar using a hand mixer until stiff peaks form, which usually takes about 3–5 minutes. This step is crucial for the bread’s fluffy texture.
- Mix yolk mixture: In a separate bowl, whisk together the egg yolks, softened cream cheese (or Greek yogurt), and salt until the mixture becomes smooth and pale.
- Combine mixtures: Gently fold the yolk mixture into the beaten egg whites in batches, taking care not to deflate the airy egg whites to retain the light texture.
- Shape and bake: Spoon the combined mixture onto the prepared baking sheet in 6 even rounds and smooth the tops for even baking. Bake for 25–30 minutes or until the cloud breads are golden brown and firm to the touch.
- Cool down: Allow the cloud breads to cool on the baking pan for a few minutes, then transfer them to a wire rack to cool completely before serving or storing.
