Description

Ingredients

Vegetables:

  • 3 cups chopped Romaine lettuce (optional, for a more filling version)
  • 1 large cucumber, sliced into half-moons
  • 2 cups cherry tomatoes, halved
  • 1 green bell pepper, thinly sliced
  • ¼ red onion, thinly sliced

Additional Ingredients:

  • ½ cup Kalamata olives
  • ½ cup crumbled feta cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • lemon wedges for serving (optional)


Instructions

  1. Prepare the Salad: In a large bowl, combine the cucumber, cherry tomatoes, bell pepper, red onion, olives, and feta cheese. Add chopped Romaine lettuce if desired.
