Ingredients
Dry Ingredients
- 2 1/4 cups almond flour (preferably finely ground, such as King Arthur brand)
- 1/2 tsp baking powder
Wet Ingredients
- 1 cup cottage cheese (Good Culture brand recommended for moisture and texture)
- 1 egg
- 1.5 tbsp water
Topping (Optional)
- Everything bagel seasoning (adds crunch and savory flavor)
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix wet ingredients: In a medium bowl, combine the cottage cheese, egg, and water until well blended and smooth. You can use a hand mixer or whisk thoroughly to break down the cottage cheese for a smoother batter.
- Combine dry ingredients: In a separate large bowl, mix the almond flour and baking powder thoroughly to ensure even rising.
- Form the dough: Add the wet ingredients to the dry ingredients and mix until a sticky dough forms. If it feels too wet, add a little more almond flour; if too dry, add a teaspoon of water at a time.
- Shape the bagels: Divide the dough into 4 equal portions. Wet your hands slightly and roll each portion into a ball. Then, poke a hole through the center of each ball and gently shape to form bagels.
- Add seasoning: If desired, sprinkle the bagels with everything bagel seasoning to add flavor and crunch.
- Bake: Place the bagels on the prepared baking sheet and bake for 18-20 minutes or until they turn golden brown and firm to the touch.
- Cool and serve: Remove from the oven and let the bagels cool on a wire rack for at least 10 minutes before slicing and serving.
Notes
- The texture will be slightly different from traditional wheat bagels but still wonderfully moist and chewy.
- Use finely ground almond flour for best texture and consistency.
- The cottage cheese can be blended before mixing to create a smoother dough.
- Store leftover bagels in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
- Feel free to experiment with different toppings such as sesame seeds, poppy seeds, or garlic powder.
