Wet Ingredients

  • 1 cup cottage cheese (Good Culture brand recommended for moisture and texture)
  • 1 egg
  • 1.5 tbsp water

Topping (Optional)

  • Everything bagel seasoning (adds crunch and savory flavor)


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix wet ingredients: In a medium bowl, combine the cottage cheese, egg, and water until well blended and smooth. You can use a hand mixer or whisk thoroughly to break down the cottage cheese for a smoother batter.
  3. Combine dry ingredients: In a separate large bowl, mix the almond flour and baking powder thoroughly to ensure even rising.
  4. Form the dough: Add the wet ingredients to the dry ingredients and mix until a sticky dough forms. If it feels too wet, add a little more almond flour; if too dry, add a teaspoon of water at a time.
