Citrus Vinaigrette is a zesty, sunshine-bright dressing made with fresh citrus juice, olive oil, and a touch of honey or maple syrup—perfect for brightening salads, grain bowls, or roasted vegetables year-round.
Ingredients
- 1/4 cup fresh orange juice
- 2 tbsp fresh lemon juice
- 1 tsp finely grated citrus zest (orange or lemon)
- 1 tsp Dijon mustard
- 1–2 tsp honey or maple syrup (to taste)
- 1/3 cup extra virgin olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- In a small bowl, combine orange juice, lemon juice, and citrus zest.
- Whisk in Dijon mustard and honey or maple syrup until smooth.
- Slowly drizzle in olive oil while whisking constantly until emulsified. Alternatively, shake all ingredients together in a sealed jar.
- Season with salt and pepper to taste, and adjust sweetness or acidity as needed.
- Use immediately or refrigerate for up to 1 week. Shake well before serving.
Notes
- For variety, use lime or grapefruit juice in place of lemon or orange.
- Add finely chopped fresh herbs like parsley or mint for extra flavor.
