Description

Citrus Vinaigrette is a zesty, sunshine-bright dressing made with fresh citrus juice, olive oil, and a touch of honey or maple syrup—perfect for brightening salads, grain bowls, or roasted vegetables year-round.


Ingredients

  • 1/4 cup fresh orange juice
  • 2 tbsp fresh lemon juice
  • 1 tsp finely grated citrus zest (orange or lemon)
  • 1 tsp Dijon mustard
  • 12 tsp honey or maple syrup (to taste)
  • 1/3 cup extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. In a small bowl, combine orange juice, lemon juice, and citrus zest.
  2. Whisk in Dijon mustard and honey or maple syrup until smooth.
  3. Slowly drizzle in olive oil while whisking constantly until emulsified. Alternatively, shake all ingredients together in a sealed jar.
  4. Season with salt and pepper to taste, and adjust sweetness or acidity as needed.
  5. Use immediately or refrigerate for up to 1 week. Shake well before serving.

Notes

  • For variety, use lime or grapefruit juice in place of lemon or orange.
  • Add finely chopped fresh herbs like parsley or mint for extra flavor.
  • Use as a dressing for salads, grain bowls, roasted veggies, or seafood.
  • If it separates in the fridge, let it sit at room temperature then shake or whisk again.
