Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract

Optional Add-Ins:

  • 1/3 cup chopped walnuts or pecans
  • 1/3 cup dried cranberries or raisins


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, combine the mashed sweet potato, nut butter, maple syrup, egg, and vanilla extract until smooth.
  3. Add dry ingredients: Mix in oats, almond flour, cinnamon, nutmeg, baking soda, and salt until well combined.

  5. Bake: Drop spoonfuls of dough onto the baking sheet and flatten slightly. Bake for 14–16 minutes until golden.
