- 6 bone-in, skin-on chicken thighs
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons lime zest
- 1/4 cup olive oil
- 1/2 cup chopped fresh cilantro
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl or resealable plastic bag, combine lime juice, lime zest, olive oil, cilantro, garlic, cumin, paprika, chili powder, salt, and black pepper.
- Add chicken thighs to the marinade and ensure they are well coated. Marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours.
- Preheat a grill or large skillet over medium-high heat.
- Remove chicken from marinade and shake off excess. Discard remaining marinade.
- Cook chicken thighs skin-side down for 5-7 minutes, then flip and cook for another 5-7 minutes, or until internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving. Garnish with extra cilantro and lime wedges if desired.
Notes
- For a spicier version, add a chopped jalapeño to the marinade.
- Boneless, skinless thighs can be used, but reduce cooking time accordingly.
- This dish pairs well with rice, grilled vegetables, or a fresh salad.
