Description

Juicy and flavorful cilantro lime chicken thighs marinated in a zesty mix of lime juice, fresh cilantro, garlic, and spices, then grilled or pan-seared to perfection.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons lime zest
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl or resealable plastic bag, combine lime juice, lime zest, olive oil, cilantro, garlic, cumin, paprika, chili powder, salt, and black pepper.
  2. Add chicken thighs to the marinade and ensure they are well coated. Marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours.
  3. Preheat a grill or large skillet over medium-high heat.
  4. Remove chicken from marinade and shake off excess. Discard remaining marinade.
  5. Cook chicken thighs skin-side down for 5-7 minutes, then flip and cook for another 5-7 minutes, or until internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for a few minutes before serving. Garnish with extra cilantro and lime wedges if desired.

Notes

  • For a spicier version, add a chopped jalapeño to the marinade.
  • Boneless, skinless thighs can be used, but reduce cooking time accordingly.
  • This dish pairs well with rice, grilled vegetables, or a fresh salad.
