Description

Ingredients

Chicken Thighs:

  • 2 pounds boneless, skinless chicken thighs

Marinade:

  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 teaspoons lime zest
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Marinate the Chicken: In a large bowl or zip-top bag, combine olive oil, lime juice, lime zest, garlic, cilantro, cumin, paprika, salt, and pepper. Add the chicken thighs and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes.
  2. Cook the Chicken: Preheat a grill, grill pan, or skillet over medium-high heat. Remove chicken from marinade, discard excess, and cook the thighs for 5–7 minutes per side until golden and cooked through.
