Description

These Christmas Shortbread Sugar Cookie Bites are a delightful treat perfect for the holiday season. With a buttery, melt-in-your-mouth texture and festive sprinkles, these mini cookies are sure to be a hit at any gathering.


Ingredients

1 cup unsalted butter (softened)

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 tablespoons red and green sprinkles or nonpareils (plus more for topping, if desired)


Instructions

  1. Preheat the oven: Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
  4. Add sprinkles: Fold in the holiday sprinkles.
  5. Shape and bake: Roll the dough into small 1/2-inch balls and place them 1 inch apart on the prepared baking sheet. Lightly press each ball down with your fingers. Top with a few more sprinkles if desired. Bake for 12–15 minutes or until the bottoms are lightly golden.
  6. Cool and serve: Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
