Description

This Christmas Salad is a delightful mix of fresh greens, sweet pomegranate seeds, crunchy almonds, tangy feta cheese, and a hint of sweetness from dried cranberries, all tossed in a flavorful dressing. It’s the perfect festive dish for holiday gatherings.


Ingredients

Mixed Greens:

  • 6 cups mixed greens (such as arugula, spinach, and baby romaine)

Add-Ins:

  • 1/2 cup pomegranate seeds
  • 1/2 cup sliced almonds (toasted)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup thinly sliced red onion
  • 1 crisp apple (such as Honeycrisp or Fuji), thinly sliced
  • 1/4 cup dried cranberries

For the dressing:

  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
