Ingredients
Salmon:
- 1 side of salmon (2 to 2.5 pounds), skin on
Glaze:
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary or thyme
Garnish:
- 1/4 cup pomegranate seeds
- 2 tablespoons chopped fresh parsley
- Lemon slices, for garnish
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper or foil.
- Prepare the salmon: Place the salmon fillet skin-side down on the prepared sheet.
- Make the glaze: In a small bowl, whisk together the olive oil, Dijon mustard, honey, garlic, lemon juice, salt, pepper, and rosemary. Brush the mixture evenly over the top of the salmon.
- Bake: Bake for 18–22 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 135–140°F.
- Rest and garnish: Remove from oven and let rest for 5 minutes. Garnish with pomegranate seeds, chopped parsley, and lemon slices before serving.
