- Prepare the baking sheet: Line a baking sheet with parchment paper to prevent the yogurt bites from sticking during freezing.
- Mix yogurt and strawberries: In a medium bowl, gently fold the finely chopped strawberries into the plain Greek yogurt. Add the honey or maple syrup and vanilla extract, stirring until the mixture is evenly combined.
- Form the bites: Drop tablespoon-sized portions of the yogurt mixture onto the prepared baking sheet. Slightly flatten the tops with the back of a spoon to shape the bites.
- Freeze the bites: Place the baking sheet in the freezer and freeze the yogurt bites for 1 to 2 hours, or until completely firm.
