Ingredients
Crust:
- 1½ cups chocolate cookie crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- ¼ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
- 1 cup semisweet chocolate chips, melted and cooled slightly
Topping:
- 1½ cups fresh strawberries, halved
- ½ cup strawberry jam, warmed
- Whipped cream and chocolate shavings for garnish (optional)
Instructions
- Preheat the oven: to 325°F (160°C).
- Prepare the crust: Combine cookie crumbs, sugar, and melted butter. Press into a springform pan and bake for 10 minutes.
- Make the filling: Beat cream cheese until smooth. Add sugar, cocoa powder, and vanilla. Mix in eggs, sour cream, and melted chocolate. Pour over crust.
- Bake: for 55–60 minutes until set. Cool in the oven, then refrigerate for at least 4 hours.
- Top and serve: Add halved strawberries on top. Brush with warm jam and garnish with whipped cream and chocolate shavings.
