Description

Ingredients

Pecan Clusters:

  • 2 cups pecan halves (lightly toasted)

Caramel Layer:

  • 1 (11 oz) bag soft caramels (about 35 caramels)
  • 2 tbsp heavy cream

Chocolate Layer:

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening
  • Sea salt for garnish (optional)

Instructions

  1. Prepare Pecan Clusters: Line a baking sheet with parchment paper. Arrange pecan halves in small clusters of 3–4 pieces each, spaced evenly apart.
  2. Create Caramel Layer: In a microwave-safe bowl, combine unwrapped caramels and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth. Spoon about 1 tablespoon of caramel over each pecan cluster.
  3. Add Chocolate Layer: Melt chocolate chips with coconut oil in 30-second bursts, stirring until smooth. Drizzle the melted chocolate over the caramel layer of each cluster.
  4. Finish and Serve: Optionally sprinkle each cluster with sea salt. Allow to set at room temperature or chill for quicker results.

Notes

  • For a richer flavor, toast the pecans in the oven at 350°F for 8–10 minutes before assembling.
  • Store in an airtight container at room temperature for up to 1 week or refrigerate for longer freshness.
