Ingredients

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

Additional:

  • 1/2 cup creamy peanut butter, slightly warmed
  • 1/3 cup chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In another bowl, whisk eggs, milk, oil, and vanilla until smooth.
  4. Combine Mixtures: Gradually mix wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Fill Muffin Cups: Divide batter evenly into muffin cups, filling about two-thirds full.
  6. Add Peanut Butter Swirl: Drop 1 teaspoon of peanut butter on top of each muffin and swirl lightly with a toothpick.
  7. Add Chocolate Chips: Sprinkle with chocolate chips if desired.
  8. Bake: Bake for 18–20 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Cool and Serve: Let muffins cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • For extra peanut butter flavor, swirl in 2 teaspoons per muffin.
  • Store muffins in an airtight container at room temperature for 3 days or freeze for up to 2 months.
