Description

Ingredients

Wet Ingredients:

  • 2 ripe bananas (mashed)
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 2 large eggs

Dry Ingredients:

  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (plus extra for topping)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or greasing.
  2. Mix wet ingredients: In a large bowl, combine mashed bananas, peanut butter, honey, melted coconut oil, vanilla extract, and eggs.
  3. Add dry ingredients: Stir in cocoa powder, flour, baking soda, and salt until just mixed. Fold in mini chocolate chips.
  4. Bake: Divide batter into muffin cups, top with chocolate chips, and bake for 16–18 minutes until a toothpick comes out clean.
  5. Cool and serve: Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
