Ingredients
Dry Ingredients
- 2 cups granulated sugar
- ½ cup unsweetened cocoa powder
- 3 cups quick-cooking oats
- ¼ teaspoon salt
Wet Ingredients
- ½ cup milk
- ½ cup unsalted butter
- ½ cup creamy peanut butter
- 1 teaspoon vanilla extract
Instructions
- Combine and Heat: In a medium saucepan over medium heat, combine the sugar, cocoa powder, milk, and butter. Stir constantly until the mixture comes to a rolling boil.
- Boil the Mixture: Once boiling, let it bubble for exactly 1 minute to ensure proper setting of the cookies.
- Remove and Mix Peanut Butter Mixture: Immediately remove from heat. Stir in the peanut butter, vanilla extract, and salt until the mixture is smooth and well combined.
- Add Oats: Add the quick-cooking oats to the saucepan and mix thoroughly until all oats are evenly coated with the chocolate peanut butter mixture.
- Form Cookies: Drop heaping tablespoons of the mixture onto wax paper or a parchment-lined baking sheet, spacing them out to prevent sticking.
- Set Cookies: Let the cookies cool and set at room temperature for 30 to 45 minutes. For faster setting, refrigerate the cookies until firm.
Notes
- Boil for exactly 1 minute—too short and the cookies won’t set; too long and they may become dry or crumbly.
- For a chunkier texture, substitute quick-cooking oats with old-fashioned oats.
- Optional: Stir in shredded coconut or chopped nuts for extra crunch and flavor.
