Description

Chocolate No-Bake Cookies with Peanut Butter are rich, chewy, and satisfying treats made with oats, cocoa powder, and creamy peanut butter—no oven required! Perfect for busy days, last-minute cravings, or fun with kids, these cookies come together quickly and set up beautifully for a grab-and-go dessert or snack.

Ingredients

Dry Ingredients

  • 2 cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 3 cups quick-cooking oats
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup milk
  • ½ cup unsalted butter
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract

Instructions

  1. Combine and Heat: In a medium saucepan over medium heat, combine the sugar, cocoa powder, milk, and butter. Stir constantly until the mixture comes to a rolling boil.
  2. Boil the Mixture: Once boiling, let it bubble for exactly 1 minute to ensure proper setting of the cookies.
  3. Remove and Mix Peanut Butter Mixture: Immediately remove from heat. Stir in the peanut butter, vanilla extract, and salt until the mixture is smooth and well combined.
  4. Add Oats: Add the quick-cooking oats to the saucepan and mix thoroughly until all oats are evenly coated with the chocolate peanut butter mixture.
  5. Form Cookies: Drop heaping tablespoons of the mixture onto wax paper or a parchment-lined baking sheet, spacing them out to prevent sticking.
  6. Set Cookies: Let the cookies cool and set at room temperature for 30 to 45 minutes. For faster setting, refrigerate the cookies until firm.

Notes

  • Boil for exactly 1 minute—too short and the cookies won’t set; too long and they may become dry or crumbly.
  • For a chunkier texture, substitute quick-cooking oats with old-fashioned oats.
  • Optional: Stir in shredded coconut or chopped nuts for extra crunch and flavor.
