Description

Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt

Wet Ingredients:

  • 4 tbsp unsalted butter (softened)
  • ⅔ cup granulated sugar
  • 1 large egg
  • 1 tsp peppermint extract
  • 4 oz semisweet or dark chocolate (melted and slightly cooled)
  • ½ cup powdered sugar (for coating)


Instructions

  1. Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  2. Wet Ingredients: In a large bowl, beat the butter and granulated sugar until light and fluffy. Add the egg and peppermint extract and beat until combined. Mix in the melted chocolate until smooth.
  3. Gradually add the dry ingredients and mix just until combined.
  4. Cover the dough and refrigerate for at least 1 hour, or until firm.
  5. Preheat oven to 350°F and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and coat generously in powdered sugar.
  7. Place on baking sheet, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes, or until the tops are cracked and the edges are set.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
