Description

Ingredients

Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups semi-sweet chocolate chips
  • 1 cup chopped Andes mint candies or mint chocolate chips


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and extracts: Beat in the eggs, one at a time, then stir in the vanilla and peppermint extracts.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add mix-ins: Fold in the chocolate chips and chopped mint candies.
  7. Bake: Drop tablespoon-sized balls of dough onto the prepared baking sheets and bake for 10 to 12 minutes.
  8. Cool: Allow cookies to cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • For a more intense mint flavor, increase the peppermint extract to 1½ teaspoons.
  • You can substitute mint chocolate chips for Andes candies if desired.
