Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- ⅔ cup unsweetened cocoa powder
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- ½ teaspoon salt
Wet Ingredients:
- 1 cup mayonnaise (full-fat)
- 1 cup water
- 2 teaspoons vanilla extract
Optional Frosting:
- 1 cup heavy cream
- 1½ cups semi-sweet chocolate chips
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and grease a 9×13-inch pan or two 9-inch round cake pans.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugars, cocoa, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, mix mayonnaise, water, and vanilla until smooth. Add to dry ingredients and mix.
- Bake: Pour batter into pan(s) and bake for 30–35 minutes. Cool completely.
- Make Frosting: Heat cream until simmering, pour over chocolate chips, stir until smooth, and cool. Spread over cake.

- Mayonnaise keeps the cake moist and rich.
