Description

Ingredients

Cake:

  • 1 cup Guinness stout
  • 10 tablespoons unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 3/4 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Frosting:

  • 8 ounces cream cheese (softened)
  • 1 1/4 cups powdered sugar
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and butter a 9-inch round springform pan or line it with parchment paper.
  2. Prepare the cake batter: In a saucepan, combine Guinness and butter, then add cocoa powder and sugar. Whisk until smooth. In a bowl, mix sour cream, eggs, and vanilla. Combine with Guinness mixture. Fold in flour, baking soda, and salt until just combined. Pour batter into the pan and bake for 45–55 minutes.
  3. Make the frosting: Beat cream cheese until smooth, sift in powdered sugar, and mix. Add heavy cream and beat until fluffy.
  4. Frost the cake: Once cooled, frost the top of the cake to resemble a pint of Guinness.

Notes

  • This cake can be made a day ahead and stored covered at room temperature before frosting.
  • For a richer chocolate flavor, add 1/2 cup mini chocolate chips to the batter.
  • Pairs well with coffee or a pint of stout.
