Ingredients
Cake:
- 1 cup Guinness stout
- 10 tablespoons unsalted butter
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 3/4 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt
Frosting:
- 8 ounces cream cheese (softened)
- 1 1/4 cups powdered sugar
- 1/2 cup heavy cream
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and butter a 9-inch round springform pan or line it with parchment paper.
- Prepare the cake batter: In a saucepan, combine Guinness and butter, then add cocoa powder and sugar. Whisk until smooth. In a bowl, mix sour cream, eggs, and vanilla. Combine with Guinness mixture. Fold in flour, baking soda, and salt until just combined. Pour batter into the pan and bake for 45–55 minutes.
- Make the frosting: Beat cream cheese until smooth, sift in powdered sugar, and mix. Add heavy cream and beat until fluffy.
- Frost the cake: Once cooled, frost the top of the cake to resemble a pint of Guinness.
Notes
- This cake can be made a day ahead and stored covered at room temperature before frosting.
- For a richer chocolate flavor, add 1/2 cup mini chocolate chips to the batter.
