Ingredients
For the Cookies:
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ½ cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup freeze-dried strawberries, crushed into powder
For Dipping and Garnish:
- 8 ounces semi-sweet chocolate, chopped or chips
- 1 tablespoon coconut oil or shortening
- ½ cup sprinkles or crushed freeze-dried strawberries for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 350°F and line baking sheets with parchment paper.
- Mix Dough: Cream butter, granulated sugar, and powdered sugar. Add egg and vanilla. Combine dry ingredients with crushed strawberries. Mix wet and dry ingredients. Shape into balls and flatten.
- Bake: Bake for 10–12 minutes until edges set. Cool on a wire rack.
- Melt Chocolate: Melt chocolate and coconut oil. Dip cookies in chocolate and garnish. Let set.
Notes
