Ingredients

Base

  • 2 cups fresh dates, pitted
  • 2 cups almond flour
  • 1/4 cup sunflower seed butter
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2–3 tablespoons water

Topping

  • 1 1/4 cups dark chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. Pit and Process Dates: Begin by pitting the fresh dates and placing them into a food processor. Add the almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse the mixture until it reaches a cookie dough-like texture.
  2. Adjust Consistency: If the mixture seems too dry or crumbly, add an additional tablespoon of water as needed to form a sticky but moldable dough.
  3. Press into Pan: Line an 8×8 inch baking pan with parchment paper. Evenly press the dough mixture firmly into the pan to create an uniform base layer.
  4. Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth and glossy.
  5. Top and Chill: Pour the melted chocolate over the pressed date and almond base. Smooth out the chocolate layer evenly using a spatula. Refrigerate the pan for at least 30 minutes to allow the chocolate to set firmly.
  6. Slice and Enjoy: Once the bars are fully set and firm, lift them out using the parchment paper and slice into 12 equal bars. Store the bars in the refrigerator to maintain freshness.
