Ingredients
Base
- 2 cups fresh dates, pitted
- 2 cups almond flour
- 1/4 cup sunflower seed butter
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 2–3 tablespoons water
Topping
- 1 1/4 cups dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Pit and Process Dates: Begin by pitting the fresh dates and placing them into a food processor. Add the almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse the mixture until it reaches a cookie dough-like texture.
- Adjust Consistency: If the mixture seems too dry or crumbly, add an additional tablespoon of water as needed to form a sticky but moldable dough.
- Press into Pan: Line an 8×8 inch baking pan with parchment paper. Evenly press the dough mixture firmly into the pan to create an uniform base layer.
- Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth and glossy.
- Top and Chill: Pour the melted chocolate over the pressed date and almond base. Smooth out the chocolate layer evenly using a spatula. Refrigerate the pan for at least 30 minutes to allow the chocolate to set firmly.
- Slice and Enjoy: Once the bars are fully set and firm, lift them out using the parchment paper and slice into 12 equal bars. Store the bars in the refrigerator to maintain freshness.
Notes
- Use fresh, soft dates for easiest processing and best texture.
- Almond flour can be substituted with almond meal if necessary.
- Sunflower seed butter provides a nut-free alternative to almond or peanut butter.
- If preferred, use a high-quality dark chocolate with at least 70% cacao for a richer flavor.
- Store bars refrigerated to prevent melting and maintain texture.
- These bars are naturally sweetened with dates and contain no refined sugars.
