Description

Delight in these rich and fudgy chocolate-covered strawberry brownies, featuring a luscious layer of fresh strawberries topped with smooth melted chocolate. Perfect as a romantic dessert or a special treat, these brownies combine the classic flavors of chocolate and strawberries in an irresistible baked delight.

Ingredients

Brownie Base

  • 1 box brownie mix (plus ingredients listed on the box such as eggs, oil, and water)

Topping

  • 1 pint fresh strawberries, hulled and halved
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter

Instructions

  1. Preheat and prepare batter: Preheat your oven to 350°F (175°C). Prepare the brownie mix according to package instructions, including any required eggs, oil, and water.
  2. Bake the brownies: Pour the batter into a greased or parchment-lined 9×9-inch baking dish. Bake for 25–30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from oven and let cool completely in the pan.
  3. Add strawberries: Once cooled, arrange the halved strawberries cut-side down evenly over the entire surface of the brownies, covering them completely.
  4. Melt chocolate topping: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely smooth and melted.
  5. Cover with chocolate: Pour the melted chocolate mixture evenly over the strawberries, spreading it carefully to cover them fully.
  6. Chill to set: Refrigerate the brownie dish for at least 30 minutes to allow the chocolate topping to set firmly before slicing and serving.

Notes

  • Ensure the brownies are completely cool before adding strawberries to avoid moisture causing the fruit to weep.
  • For clean and easy slicing, dip your knife in hot water between cuts.
  • Store leftover brownies in the refrigerator for up to 3 days to maintain freshness and chocolate firmness.
