  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder

Wet Ingredients:

  • ½ cup milk
  • ⅓ cup unsalted butter, melted
  • 1½ teaspoons vanilla extract

  • ½ cup brown sugar, packed
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Mix Dry Ingredients: In a medium bowl, combine flour, baking powder, salt, granulated sugar, and 2 tablespoons of cocoa powder.
  3. Add Wet Ingredients: Stir in milk, melted butter, and vanilla until smooth.
  4. Layer Batter: Pour the batter into the dish, spreading it evenly.
  5. Prepare Topping: In a small bowl, mix brown sugar and ¼ cup cocoa powder, then sprinkle over the batter.
  6. Add Hot Water: Carefully pour hot water over the top without stirring.
  7. Bake: Bake for 35–40 minutes until set on top with a fudgy sauce underneath.
  8. Cool and Serve: Allow to cool for 10 minutes before serving, ideally with vanilla ice cream.

Notes

  • The cobbler will look watery on top before baking, creating the fudgy sauce underneath.
  • For a richer chocolate flavor, consider adding a pinch of espresso powder.
